For this oatmeal chocolate chip cake, Tina Kramer tried Kathy Schneller’s recipe from the Taste of Zion cookbook. “It’s a new favorite,” said Kramer. “It’s really easy to make!” Try this deliciously easy recipe for your next gathering or potluck.

Oatmeal Chocolate Chip Cake

    1 3/4 cups boiling water
    1 cup uncooked oatmeal (quick or old-fashioned)
    1 cup lightly packed brown sugar
    1 cup granulated sugar
    1 stick (1/2 cup) margarine
    2 extra large eggs
    1 3/4 cups flour
    1 teaspoon baking soda
    1/2 teaspoon salt
    1 tablespoon cocoa
    1 (12-ounce) package chocolate chips
    3/4 cup walnuts
    
    Preheat oven to 350 degrees. Grease a 9x13-inch pan.
    In a large bowl, pour boiling water over oatmeal. Let stand at room temperature for 10 minutes.
    Add brown sugar, white sugar and margarine. Stir until margarine melts.
    Add eggs; mix well. Add flour, baking soda, salt and cocoa, mixing well after each ingredient.
    Fold in half of the package of chocolate chips. Pour batter into pan.
    Sprinkle walnuts and remaining chocolate chips on top. Bake for 40 minutes or until a toothpick comes out clean.
