Roaches in the Kitchen: recipes featuring beef

The Roschewski family of Imperial keeps a cookbook of recipes, some of which date back four generations, while others are simply found recipes the family enjoys and want to pass down to their children.

The cookbook, titled Roaches in the Kitchen, is aptly named such because “roach” has been coined as an affectionate nickname for some of the family members due to it sounding similar to Roschewski (pronounced Roh-cheh-skee).

An image of the German cockroach is displayed proudly on the front of the cookbook due to the family’s predominately German heritage.

Inside are a myriad of recipes including appetizers, soups, salads, casseroles, desserts and more. Because beef plays an important role in the average Nebraskan’s diet, there are plenty of beef recipes packed into the book.

 

Hamburger Stroganoff

 

Ingredients

• 1 pound ground beef

• 1 medium onion, chopped

• 1 can cream of mushroom soup

• 1 can cream of chicken soup

• 1 cup sour cream

• 1 8 ounce can mushrooms (optional)

• 2 cups cooked egg noodles

• 1/4 cup margarine

• 2 tablespoons flour

• 1/4 tablespoon pepper

• 1 tablespoon salt

• 1 tablespoon garlic salt

 

Cooking Instructions

• In a large skillet, cook and stir ground beef and onion in butter until onion is tender.

• Stir in flour, salt, garlic salt and pepper.

• Add mushrooms (optional) and cook five minutes stirring constantly.

• Remove from heat.

• Stir in cream of mushroom and cream of chicken soups, and simmer for 10 minutes.

• Stir in sour cream and heat through, but be careful to not overheat!

• Serve over hot buttered egg noodles.
