Taco Tuesday is here!
Ever feel like you’re feeding an army? I helped set up meals for our Fellowship of Christian Athletes youth group last year, and trust me, I know how hard it is to feed 40 high school boys. (Not to mention how you fit them all in your house!)
Taco Buildup is my family’s go-to meal when we need to feed a crowd. It’s beyond easy to make, and everyone can customize it to fit their taste.
It reminds me of my good ol’ days in FCCLA when we made Walking Tacos for fundraisers. That’s when you stuff taco toppings into a mini bag of Fritoes, followed by, of course, stuffing your face with the yummy goodness of the Walking Taco.
This recipe is an interesting combination of tacos and nachos, perfect for feeding the entire Dragon football team or all your crazy cousins at the family reunion this summer (even if it’s not Tuesday).
1 lb. ground beef
1 small onion, chopped
1 small can tomato paste
1 small can tomato sauce
1 small can water
1 tbsp. sugar
1 tsp. chili powder
Dash garlic powder
Mix all ingredients together. Simmer 40 minutes, uncovered. When served, pile taco meat on Frito chips. Add shredded cheese, shredded lettuce, chopped tomatoes, black olives, guacamole, sour cream and salsa.
